Meatballs require a fundamental; thing to happen to them before they can be made.

Luckily, my little lady bought mew the very implement for my birthday recently, before we went off to discover America all over again.

That implement was a meat mincing machine, and I love it!

Not only can you mince meat, which I have done for this Meatball recipe, but also you can make sausage.

No surprises what it will be used for next, but you’ll understand why it is necessary, when you try this recipe!

2 sticks of Celery, finely chopped
