Oven Dried Tomato Sauce
I tend to spend a considerable amount of time constantly making pizza, as I am sure you are fully aware of now with this channel and my new book. But one thing that always gets looked over, is the tomato sauce needed for the pizza itself.
But it should never be overlooked, because it doesn't matter how good your dough is, if the sauce isn't right, then you have no chance of making a great pizza.
In this recipe I am showing you how to dry out tomatoes in the oven, over a lnger period of time, to really concentrate their flavour, and then turning it into a world class sauce, with my homemade chicken stock.
200g Cherry Tomatoes, cut in half
1/2 Tin Chopped Tomatoes
1/2 Tin of Chicken Stock
1 Onion, finely chopped
3 cloves of Garlic, finely chopped
1tbsp Balsamic Vinegar
One serving (serves two)
1. Add the cherry tomatoes, onions and garlic into a bowl, and add 1tsp of oregano and the balsamic vinegar in as well.
Mix to combine thoroughly, then decant into a baking tray.
2. Bake in the oven set to150C, for 1 hour.
3. When cooked, add to a liquidiser, along with the chopped tomatoes, stock and oregano.
Blitz down to a sauce, and reheat later, allowing it to reduce a little bit further.
