Radish Pickle

Here in Northern Ireland we are going through the summer with some of the best weather I think we have ever seen here, certainly in a very long time. This recipe for my Radish Pickle is due to that, because my garden has exploded with good food this year.

My great stress reliever, my little garden has produced potatoes, peas, soon to be strawberries, onions and now radishes.

This is a simple recipe to use up a glut of radishes, but I have kept the ingredients list down to use in salads and falafel wraps.

3 Radishes
1 Red Onion
1tbsp Red Wine Vinegar
1tbsp Sugar
1tsp Salt
Calories: 72kcal
Carb: 18g
Fat” 0g
Protein: 0.5g

1. Chop up the red onion and radish finely, and add to a bowl.

2. Add in the red wine vinegar, the sugar and salt.

3. Using your hands, scrunch the veg together with the seasonings, and then leave to marry for at least 30mins.

It’s best left overnight in the fridge, for a much tastier experience.
