So as you may have guessed from the many posts related to it on my social media feeds, I am going through a diet phase, for varying reasons, and was trying to create a low calorie healthy coleslaw recipe, naming it Skinny Coleslaw.
Normally I would suggest doing this with yogurt, but good old Hellmann’s came up with a lower fat alternative to their normal mayonnaise, and who doesn’t love Hellmann’s?
This time though the vegetables are not drowned in it, there is just enough to coat, making this a really well balanced side dish for any dinner you can think of.
120g Cabbage, shredded
1 Medium Carrot, grated
1/4 Courgette, grated
4 Spring Onions, chopped
2tbsp Lighter than Light Mayonnaise
Salt & Pepper
