Skinny Coleslaw


So as you may have guessed from the many posts related to it on my social media feeds, I am going through a diet phase, for varying reasons, and was trying to create a low calorie healthy coleslaw recipe, naming it Skinny Coleslaw.

Normally I would suggest doing this with yogurt, but good old Hellmann’s came up with a lower fat alternative to their normal mayonnaise, and who doesn’t love Hellmann’s?

This time though the vegetables are not drowned in it, there is just enough to coat, making this a really well balanced side dish for any dinner you can think of.

Ingredients

120g Cabbage, shredded
1 Medium Carrot, grated
1/4 Courgette, grated
4 Spring Onions, chopped
2tbsp Lighter than Light Mayonnaise
Salt & Pepper

For one serving (out of two)

Calories: 97kcal
Carbs: 16g
Fat: 2g
Protein: 3g


directions

1. Add all of the vegetables into a mixing bowl, and add the salt and pepper, tossing to cover.

2. Add in the mayonnaise, and then mix through thoroughly.

It really is that easy. Serve with your choice of dinners, including chicken and beef!
