So for those that have followed my foray into cooking, you will note that I am a great lover of bbq, and one of those meals will always be pulled pork.
The reason for this is not only is it great on its own, but it can be used any many other ways, such as in grilled cheese sandwiches and Ragu for example.
But of course in Northern Ireland we can't get outside at the minute, due to the multitude of snow we have here, but that shouldn't stop us from getting out the slow cooker, and creating this wonderful meal in the heat of our own kitchens.
1kg Pork Shoulder joint
2 tbsp Brown Sugar
1 tsp Mustard Powder
1 tsp Smoked Paprika
1 tbsp Black Pepper
1 tbsp Oregano
1 1/2 tbsp Salt
1. Mix all of the spices and sugar together, to form the rub that will coat the pork.
2. Cover the pork in the rub, ensuring every part is fully covered.
3. place it in the slow cooker, along with around 400ml water, and cook on high for 8-10hours.
This depends on what you have on that day, leave it and forget it.
4. Lift it out in chunks as it will be very tender, and pull with two forks.
