Tomato Soup


Do you want my fastest, and best tomato soup recipe ever?

Okay then, here it is. But it has a special ingredient.

You see, I like my tomato soup to be savoury, not sweet. So I introduce my usual balsamic vinegar to the mix.

But thats not the ingredient that takes this tomato soup to the next level.

It’s Greek Basil.

Slightly aniseed in flavour, it makes this a much more savoury dish, and pleases my tastebuds immeasurably. I am hoping that it will do that for you too.

1 tin of Tomatoes
1tbsp Balsamic Vinegar
1tsp Greek Basil
1/2 Pint of Chicken Stock, use Veg Stock if your veggie
Salt & Pepper to taste

directions

1. Put all of the ingredients into a liquidiser and blitz down until fully combined.

2. Put a saucepan onto a high heat, add the soup mix and bring to a boil.

3. Turn down to a simmer, and allow to reduce by half, around 15-20mins, until it becomes thick and glossy.

Save with your favourite bread to dunk away!
